My Family's Favorite Fall Cookie

Three ingredients = easy and delicous!

Several years ago, as my husband was preparing for a long work-related road trip, I was searching for some easy recipes to send him off with tasty, homemade snacks. I came across this recipe for a soft cookie and it remains one of my family's favorite fall treats. Not only does it require just THREE ingredients, but they can all be purchased for under $5!

Pumpkin Chocolate Chip Cookies

Ingredients:

  • 15oz can of pumpkin puree (not pumpkin pie filling)
  • 16oz bag of semi-sweet chocolate chips
  • 1 box of spice cake mix

Instructions:

  1. Preheat oven to 350 degrees.
  2. Line a baking sheet with parchment paper to prevent burning.
  3. Mix cake mix (dry powder only) and pumpkin together until smooth. Stir in chocolate chips.
  4. Drop by rounded tablespoons about 2 inches apart on baking sheet.
  5. Bake 13-15 minutes until puffed and a toothpick inserted comes out clean. 
  6. Cool for 5 minutes on sheet pan before transferring to a rack to cool completely.
  7. Store in an air-tight container.
