Several years ago, as my husband was preparing for a long work-related road trip, I was searching for some easy recipes to send him off with tasty, homemade snacks. I came across this recipe for a soft cookie and it remains one of my family's favorite fall treats. Not only does it require just THREE ingredients, but they can all be purchased for under $5!

Pumpkin Chocolate Chip Cookies
Ingredients:
- 15oz can of pumpkin puree (not pumpkin pie filling)
- 16oz bag of semi-sweet chocolate chips
- 1 box of spice cake mix
Instructions:
- Preheat oven to 350 degrees.
- Line a baking sheet with parchment paper to prevent burning.
- Mix cake mix (dry powder only) and pumpkin together until smooth. Stir in chocolate chips.
- Drop by rounded tablespoons about 2 inches apart on baking sheet.
- Bake 13-15 minutes until puffed and a toothpick inserted comes out clean.
- Cool for 5 minutes on sheet pan before transferring to a rack to cool completely.
- Store in an air-tight container.
