This time of year I start pinning and Googling soup recipes because nothing beats a warm cup or bowl of soup or stew on a blustery fall or winter day! Here are 12 recipes from my own boards that you might not have tried before!
Paula Deen's Crockpot Potato Soup
30-Minute Broccoli Cheddar Soup
- Cheeseburger Soup: 1 pound ground beef, 3/4 cup chopped onion, 3/4 cup shredded carrots, 3/4 cup diced celery, 1 teaspoon dried basil, 1 teaspoon dried parsley flakes, 4 tablespoons butter divided, 3 cups chicken broth, 4 cups diced peeled potatoes (1-3/4 pounds), 1/4 cup all-purpose flour, 2 cups (8 ounces) process cheese (Velveeta or shredded cheddar is ok too), 1-1/2 cups milk, 3/4 teaspoon salt, 1/4 to 1/2 teaspoon pepper, 1/4 cup sour cream. In a 3-qt. saucepan, brown beef; drain and set aside. In the same saucepan, sauté onion, carrots, celery, basil and parsley in 1 tablespoon of butter until vegetables are tender, about 10 minutes. Add broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream.
- Crockpot Chicken Taco Soup: One can each of kidney beans, black beans, Northern beans, pork 'n beans, corn, diced tomatoes and green chilies, 1 taco seasoning packet, 1 dry ranch dressing packet, 4 thawed chicken breasts. Put all in a crockpot but do not mix. Cook for 6 hours on high. Pull out chicken, shred it with forks, and put it back in. Mix. Serve with shredded cheese, sour cream (optional) and corn chips (optional).
- Tortellini Soup: Sauté some minced garlic in a tablespoon of butter. Add 1-1.5 cartons of chicken broth (or veggie), bring to a boil, add 1 bag frozen tortellini. Cook a few minutes until al dente. Add1 can of stewed tomatoes and half to one small package of frozen chopped spinach (depending on how much you like spinach). Simmer for a few minutes, breaking up tomatoes into small pieces w/ back of wooden spoon. Serve topped with grated or shredded parmesan cheese.
